Sweet Potato & Sausage Soup

This is one of Marks favorites, and one of my own recipes. Great for those nights you want to stay in and get cozy.

Ingredients

1 lb. Spicy Ground Turkey Sausage (you can also use spicy ground pork sausage)
3 medium sized sweet potatoes (you can also use yams, same thing)
1 yellow onion
Handful of Baby Carrots
1 tsp salt
1 tsp garlic powder
1/2 tsp Cayenne pepper
2 cans or 1 carton Chicken Broth (low-sodium)
2 tsp Olive Oil

Peel sweet potatoes and cut them into nickel size pieces with a 1/2 inch thickness
Chop yellow onion and baby carrots to desired size (remember, you will be consuming these in a soup)
Add olive oil into large soup pot,
Mix together in large soup pot, ground sausage, sweet potato pieces, onion, carrots and spices.
Turn heat to medium high and cook until meat is browned and sweet potatoes are tender.
Add chicken broth and let stand until it begins to boil
Once soup begins to boil, cover and reduce heat to low setting
Leave to simmer for about 10 minutes...
and done!
