Even if you are not a fan of fish, you will still find that this salmon is delicious. It’s a family favorite.
Side note: Salmon can be pricey, however Albertsons has great deals on Salmon, best price we’ve found is 4.99 per/lb. Check the adds often for sales on Alberstons seafood...great deals!
Citrus Salmon:
Pre-heat Oven at 450
1-2lb Pink Salmon Fillet
2 tbs Lemon rind grated
1 tsp Sea Salt
½ tsp. Black pepper
2 tbs Chives
2 tbs Thyme
2 tbs Oregano
6 ½ inch slices of lemon (remove seeds)
Lay aluminum foil on a baking sheet and coat with PAM cooking spray (olive oil spray). Make sure your aluminum foil is longer than the baking pan.
Lay Salmon fillet on aluminum foil, scaled side down, and sprinkle the fillet with the lemon rind and all the listed spices.
Place lemon slices on top of fillet, coating as much of the fillet as you can.
Cut another long strip of aluminum foil and lay on top of the salmon fillet. Fold the pieces of aluminum foil (top and bottom) around the fillet creating a closed packet with the fillet inside.
Place baking sheet with wrapped fillet in the oven. Cook for about 30 minutes or until the fillet falls apart when touched by a fork.
This recipe is great with asparagus:
Asparagus:
Set oven to broil at 350.
Lightly spread olive oil on a baking sheet.
Place washed asparagus on baking sheet.
Lightly sprinkle olive oil on top of asparagus and sprinkle a pinch of rock salt on top or 1 tsp of sea salt evenly over asparagus.
Place asparagus in the oven for about 20 minutes or until asparagus is soft and shrunk slightly in size.
