We are Back

Recipes I love that I dont want to forget.

Shredded chicken-

Peanut Butter muffins
2 bananas
1 cup PB
5 tbs honey
1 egg
Add to blender, pour in greased muffin tins, cook for 15 min

Chicken asparagus stir fry
2 lbs Cubed chicken
1tbs adobo seasoning
2diced garlic cloves
1 bunch asparagus cut into thirds
1 red pepper cubed
6 mushrooms sliced into quarters
Avocado oil
Add avocado oil to pan, add Thick slices mushrooms and red peppers
Sauté veggies starting with red peppers and mushrooms on med-high heat for 10 min, then add asparagus for 5 min. Remove into separate dish to cook the chicken
Cook garlic in oil until fragrant. Add chicken and adobo seasoning. Cook on high heat till no longer pink, reduce heat to low and add veggies. Blend meat/veggies and let simmer for about 10 min. Done.

Turkey chili
Ground turkey
Chopped tomatoes
Diced onion
Diced mushrooms
Avocado oil
Chili powder, to taste
Salt
Cummin
Oregano
Garlic
Water for consistency
Tapioca flour to thicken

Chubby Girl Likey

It has been over a year since I've added anything to this blog! Wow, time has flown.
I've been struggling lately with making meals that we can actually enjoy instead of the usual 'Chicken and Vegetables.' So I went searching on 'the google' for some good paleo websites. I found this bolg, http://paleomg.com/ and it is awesome! Lots of recipes that are easy and mimic some of my favorite dishes that I have sworn to not put in my body.
Here are just a few of my new favorites. I will not make complicated recipes, so you know these are simple.

Just a few, there is also and bacon/spinach stuffed chicken that was really good...try that one too.

Mmmm...Meatloaf

If you love meat loaf, here is a good recipe.

2 lbs- Ground Turkey, beef, chicken, bison...what ever meat you fancy.
1 Yellow Onion diced
2 garlic cloves minced
2 eggs
1 tbs Worcestershire sauce
1 tbs Dijon mustard (I use honey Dijon)
1/2 tbs salt
Ground pepper to taste
1/2 cup Ketchup
Optional: 2 diced Jalapeno peppers

Pre-heat oven at 350
You will need a loaf pan to cook it in.
Place in a large bowl, ground meat, onion, garlic, eggs, Worcestershire sauce, Dijon, salt, ground pepper and Jalapenos if you choose to use them. Mix ingredients together until mixed evenly.
Place mixture in loaf pan.
Pour Ketchup over the top of the meat loaf and spread evenly.
Place in oven for 60 minutes or until middle is no longer pink.
Serve with some steamed broccoli and you've got a delicious meal!

Summer Wraps

Summer Wraps
Ingredients (adjust amount to number of wraps)
Chicken
Tomato based chili sauce
Butter or bib lettuce
Yellow peppers
Red onions
English cucumbers
Mint
Limes
Directions:
Cook chicken however you like (boil, roast, crock pot), cool, shred chicken and mix with chili sauce. Slice peppers, red onions, cucumbers in long, thin pieces. Stuff lettuce with chicken sliced veggies, chopped mint and a squeeze of lime juice.

Citrus Salmon & Asparagus


Even if you are not a fan of fish, you will still find that this salmon is delicious. It’s a family favorite.
Side note: Salmon can be pricey, however Albertsons has great deals on Salmon, best price we’ve found is 4.99 per/lb. Check the adds often for sales on Alberstons seafood...great deals!

Citrus Salmon:
Pre-heat Oven at 450
1-2lb Pink Salmon Fillet
2 tbs Lemon rind grated
1 tsp Sea Salt
½ tsp. Black pepper
2 tbs Chives
2 tbs Thyme
2 tbs Oregano
6 ½ inch slices of lemon (remove seeds)

Lay aluminum foil on a baking sheet and coat with PAM cooking spray (olive oil spray). Make sure your aluminum foil is longer than the baking pan.
Lay Salmon fillet on aluminum foil, scaled side down, and sprinkle the fillet with the lemon rind and all the listed spices.
Place lemon slices on top of fillet, coating as much of the fillet as you can.
Cut another long strip of aluminum foil and lay on top of the salmon fillet. Fold the pieces of aluminum foil (top and bottom) around the fillet creating a closed packet with the fillet inside.
Place baking sheet with wrapped fillet in the oven. Cook for about 30 minutes or until the fillet falls apart when touched by a fork.

This recipe is great with asparagus:

Asparagus:
Set oven to broil at 350.
Lightly spread olive oil on a baking sheet.
Place washed asparagus on baking sheet.
Lightly sprinkle olive oil on top of asparagus and sprinkle a pinch of rock salt on top or 1 tsp of sea salt evenly over asparagus.
Place asparagus in the oven for about 20 minutes or until asparagus is soft and shrunk slightly in size.

My Extra Meaty Chili recipe

Ingredients:
1lb ground buffalo (from sunflower market)
1lb ground elk (from sunflower market)
1lb ground turkey (from sunflower market)
1lb chopped flank steak
12 vine tomatoes (chopped)
1 jar of green mountain gringo medium salsa (from sunflower market)
1 onion
2 green peppers
1 orange pepper
1 red pepper
5 cloves garlic minced
4 tbs chili powder
2 tbs ground cumin
1 tbs ground cinnamon
6-8 chopped carrots
1 stalk of chopped celery
1 can of organic tomato paste
Roughly 3/4 cup of almond flour to thicken

Sweet Tooth: Almond Macaroons

If you must have something sweet, which on occasion I do, this is a great recipe. You'll have less guilt eating it as long as you only have one large cookie or two small cookies a day...remember, all in moderation.

Ingredients:
1 1/4 cups almonds, coarsely ground
1/8 tsp ground cinnamon
1 tsp lemon zest
2 egg whites, beaten
1/4 cup raw honey (make sure it is raw...better for you)
1 tsp lemon juice

Instructions:
1. preheat oven to 250 F
2. Grind or chop almonds coarsely (this could be done in a food processor, but make sure it does not turn into a paste)
3. Mix cinnamon and lemon zest in a medium bowl
4. Beat egg whites and add to mixture.
5. Add honey and lemon juice and stir vigorously to blend thoroughly.
6. Add almond mixture and blend thoroughly.
7. Line baking sheet with parchment paper.
8. Use a teaspoon to scoop small portions of the batter onto parchment paper.
9. Bake 30 minutes
10. Remove from paper with spatula while slightly warm.
(Suggestion, taste better once cooled. You get the crunchy texture of the almonds that way.)
